{"id":23715,"date":"2023-03-07T12:28:59","date_gmt":"2023-03-07T15:28:59","guid":{"rendered":"https:\/\/www.mundoagropecuario.cl\/new\/?p=23715"},"modified":"2023-03-15T13:10:41","modified_gmt":"2023-03-15T16:10:41","slug":"realizan-evaluacion-sensorial-de-leches-de-burra-cabra-y-vaca-con-y-sin-lactosa","status":"publish","type":"post","link":"https:\/\/www.mundoagropecuario.cl\/new\/realizan-evaluacion-sensorial-de-leches-de-burra-cabra-y-vaca-con-y-sin-lactosa\/","title":{"rendered":"Realizan evaluaci\u00f3n sensorial de leches de burra, cabra y vaca con y sin lactosa"},"content":{"rendered":"<p>Cient\u00edficos del Instituto de Investigaciones Agropecuarias (INIA) de los centros regionales INIA Remehue e INIA La Platina, realizaron una primera jornada de an\u00e1lisis sensorial de leches de burra, cabra y vaca con y sin lactosa, en el marco de un proyecto que busca evaluar el \u00edndice y la respuesta glic\u00e9mica en personas sanas y con diabetes tipo I despu\u00e9s del consumo de leche provenientes de estas distintas especies.<\/p>\n<p><a href=\"https:\/\/www.mundoagropecuario.cl\/new\/wp-content\/uploads\/2023\/03\/Investigadores-de-INIA.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-23717 alignleft\" src=\"https:\/\/www.mundoagropecuario.cl\/new\/wp-content\/uploads\/2023\/03\/Investigadores-de-INIA-586x363.jpg\" alt=\"\" width=\"549\" height=\"338\" \/><\/a>Se trata de una iniciativa que est\u00e1 llevando a cabo un equipo multidisciplinario del INIA, junto al Departamento de Nutrici\u00f3n de la Facultad de Medicina de la Universidad de Chile y el Departamento de Ciencias de la Salud de la carrera de Nutrici\u00f3n y la Facultad de Medicina de la Pontificia Universidad Cat\u00f3lica de Chile, quienes el a\u00f1o pasado ganaron el premio Tetra Pak en el Congreso de la Sociedad Chilena de Nutrici\u00f3n, Sochinut 2022, desarrollado en Valdivia.<\/p>\n<p>La primera actividad de an\u00e1lisis sensorial se realiz\u00f3 en Osorno y fue encabezada por la Coordinadora Nacional de Investigaci\u00f3n Aplicada de INIA Cristina Vergara y participaron los investigadores de Remehue, Ignacio Subiabre, Rodrigo Morales, Nicol\u00e1s Pizarro, Mariela Silva y otros miembros del panel sensorial.<\/p>\n<p>La ingeniera en Alimentos y doctora en Nutrici\u00f3n, Cristina Vergara, explic\u00f3 que en este proyecto \u201cel INIA est\u00e1 encargado de hacer la evaluaci\u00f3n sensorial y caracterizaci\u00f3n qu\u00edmica de la leche de burra de cabra y de vaca, con el fin de comparar sus caracter\u00edsticas sensoriales y nutricionales\u201d.<\/p>\n<p>Cabe se\u00f1alar que el equipo del proyecto est\u00e1 conformado por nutricionistas, m\u00e9dicos, veterinarios e ingenieros en alimentos, entre ellos los investigadores de la Universidad Cat\u00f3lica Francisca Echeverr\u00eda, Carolina Aguirre, Bruno Grassi y de la Universidad de Chile, Andr\u00e9s Bustamante y Ver\u00f3nica Sambra, mientras que el equipo de INIA est\u00e1 compuesto por Cristina Vergara, Ignacio Subiabre, Rodrigo Morales y Nicol\u00e1s Pizarro, investigadores de INIA La Platina e INIA Remehue, respectivamente.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>En este proyecto participan Ignacio Subiabre, Rodrigo Morales y Nicol\u00e1s Pizarro, investigadores de INIA Remehue y Cristina Vergara, de INIA La Platina.<\/p>\n","protected":false},"author":2,"featured_media":23716,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[1946],"tags":[2090,3127,7785,7786,7503,4878,2052,2525,1993,7784,7787,4159,4357,3988],"class_list":["post-23715","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-lacteos","tag-agricultura","tag-agro","tag-burra","tag-cabra-y-vaca-con-y-sin-lactosa","tag-cristina-vergara","tag-ignacio-subiabre","tag-inia","tag-inia-la-platina","tag-inia-remehue","tag-leche-burra","tag-mariela-silva","tag-nicolas-pizarro","tag-rodrigo-morales","tag-universidad-catolica-de-chile"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v26.6 -
