{"id":15666,"date":"2020-03-05T17:46:39","date_gmt":"2020-03-05T20:46:39","guid":{"rendered":"http:\/\/www.mundoagropecuario.cl\/new\/?p=15666"},"modified":"2020-03-09T12:22:44","modified_gmt":"2020-03-09T15:22:44","slug":"experto-busca-aumentar-la-grasa-infiltrada-de-la-carne-producida-en-base-a-pradera","status":"publish","type":"post","link":"https:\/\/www.mundoagropecuario.cl\/new\/experto-busca-aumentar-la-grasa-infiltrada-de-la-carne-producida-en-base-a-pradera\/","title":{"rendered":"Experto busca aumentar la grasa infiltrada de la carne producida en base a pradera"},"content":{"rendered":"\n<ul class=\"wp-block-gallery columns-0 is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\"><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><em>Mediante una selecci\u00f3n gen\u00e9tica y la incorporaci\u00f3n de granos locales como ma\u00edz y avena en la engorda final, el investigador de INIA, Rodrigo Morales, busca mejorar el perfil de \u00e1cidos grasos, manteniendo los aportes nutricionales beneficiosos para la salud humana.&nbsp;<\/em><\/p>\n\n\n\n<p>Este ensayo es parte de un proyecto en conjunto que incluye la participaci\u00f3n de todos los centros regionales del INIA, desde La Araucan\u00eda a Magallanes que busca aportar a mejorar la competitividad, rentabilidad y sustentabilidad de la actividad ganader\u00eda nacional.<\/p>\n\n\n\n<p>El desaf\u00edo, comenta el investigador, es incrementar la grasa infiltrada en la carne producida en pastoreo para satisfacer la demanda de un mercado, que es cada vez m\u00e1s exigente y de alto valor.<\/p>\n\n\n\n<p>Consultado sobre su trabajo, el investigador declara que \u201cNosotros estamos haciendo un ensayo en el que estamos evaluando el nivel de infiltraci\u00f3n o marmoleo, que es la grasa que est\u00e1 entre las fibras, en condiciones de pastoreo. Para ello estamos haciendo diferentes estrategias de nutrici\u00f3n y con ello queremos ver c\u00f3mo las distintas dietas asociadas a una gen\u00e9tica determinada, producen m\u00e1s grasa infiltrada en los animales producidos en condiciones de pastoreo.&nbsp;<\/p>\n\n\n\n<p>Respecto a las dietas que eval\u00faan, el experto se\u00f1ala que \u201cTenemos 2 tratamientos. Uno 100% pastoreo y otro incluyendo granos locales, como ma\u00edz y avena en la etapa final de la engorda, con raciones de 5 kg d\u00eda, hasta lograr una cobertura grado 2 en la canal, con pesos cercanos a los 550 kilos de peso vivo. En ambos tratamientos hay animales con distintos grados de potencial gen\u00e9tico para infiltrar grasa. De esta forma mediremos el efecto de la alimentaci\u00f3n y la gen\u00e9tica, cuya informaci\u00f3n hemos establecido previamente a trav\u00e9s de an\u00e1lisis realizados en el Laboratorio de INIA Carillanca y a trav\u00e9s de un panel gen\u00f3mico internacional. Este mismo ensayo se est\u00e1 replicando en la Regi\u00f3n de Magallanes para evaluar los resultados en las condiciones de la Patagonia.&nbsp;<\/p>\n\n\n\n<p><strong>Metas<\/strong><\/p>\n\n\n\n<p>\u201cEl principal desaf\u00edo es conseguir carne m\u00e1s infiltrada en condiciones de pastoreo. En trabajos anteriores realizados en INIA hemos descubierto que la carne y espec\u00edficamente la grasa infiltrada, tiene m\u00e1s cantidad de omega 3 y \u00e1cido linoleico conjugado (CLA).
